The webpage data analysis examples by UCLA lists a number of statistical analysis techniques and their application using different statistical packages. Data Science for Psychologists is an online book aimed specifically at using R for psychological research, but it's also useful for students of the humanities and other biological or social sciences.

R for Data Science is more generally focused on data science and will teach you how to do data science with R.
